Things picked up for lovanilla and her delicious goodness of <a href="http://ga-teaux.blogspot.com">Bite.Me</a> and the rest of us consigned to drooling on our laptops looking at photos of those delectable desserts.

<br />Anyway, purpose of this blog's resurrection (ha!) is to document our kuih raya adventures for this year. Will also try to share some recipes and should we attempt to do them, we'll let you know how it pans out.
<br />
<br />My first challenge this weekend would be making Afghans (not the dog, the country or the rug) cookie. Recipe is as follows:
<br />
<br />Preparation time: 20 minutes
<br />Total cooking time: 20 minutes
<br />Makes: 25
<br />
<br />150g unsalted butter, softened
<br />60g lightly acked soft brown sugar
<br />1 egg, lightly beaten
<br />1 tsp vanilla essence
<br />125g plain flour
<br />2 tbsp unsweetened cocoa powder
<br />30g desiccated coconut
<br />45g cornflakes, lightly crushed
<br />90g dark chocolate chips
<br />

<br />1. Preheat ovem to 180* C, line two baking trays with baking paper (or use silicone mat for you lucky brownies)
<br />2. Cream butter and sugar in a large mixing bowl until light and fluffy. Add egg and vanilla and beat well
<br />3. Add sifted flour and cocoa powder to bowl with the coconut and cornflakes. Stir with a metal spoon until the ingredients are combined. Put level tablespoons of mixture on the prepared trays, allowing room for spreading. Bake for 20 mins, or until lightly browned, then leave on the tray to cool completely.
<br />4. Place chocolate chips in a small heatproof bowl, bring a saucepan of water to boil, then remove pan from heat. Sit the bowl over the pan, making sure the base of the bowl does not sit in the water. Stir until the chocolate has melted and mixture is smooth. Spread the top of each biscuit thickly with the melted chocolate and allow to set.

Didn't follow any specific recipe, just used the trusted rich chocolate cake recipe and added some cream and cherries to it. I've read a few recipes on how to make black bottom cupcakes and I find two differing methods and idea of what makes it... black bottomed. One uses chocolate biscuit (Oreo-like) as a base (think graham crackers-like cheesecake base) and the other uses a dense chocolate cake batter as the black bottom. I like both in different ways (spoken like a true pro who doesn't know what she wants). The recipe with 'biscuit base' often would have a chocolate glaze after the cream cheese filling (the first picture is just before I poured chocolate glaze to fill the cup liners). The one with dense chocolate batter is like the third picture above.<br /><br />I've heard a few people who dislike these cupcake liners, calling them as just a fad or by saying that it's difficult to eat (because you need to know the how to's of peeling the liners off. My reason for using this is simple, I don't have enough cupcake pans or muffin pans to hold 'normal' cupcake liners (muffin liners) and with these they hold their form because it is designed in such a way that you can say goodbye to cupcake trays! You can spend the money saved from buying cupcake trays on silicone sheets or fondant rollers :D<br /><br />I've been baking carrot cake, butterscotch cake, marble cake, blondies and cream cheese marble cake but no pictures because I am frogetful like that. Although there were a few orders of red velvet cupcake with cream cheese frosting and also a coffee cupcake with coffee flavored buttercream frosting.<br /><br />I really enjoyed the short amount of time that I had to experience the life of having a cake business, even tho it was a very small one I would say. It was hard work and we went through one hellova rollercoaster (emotionally, mentally, and physically) but we made it through and we're very proud of it. Especially because it was made with love (chewah!). <br /><br />I think we'll probably provide a more in depth post on the cake-making procedure soon. Personally for me, it was one of the most exciting things I've done in a while. Seriously, it pwns everything you've ever tasted. When I had it with Lovanilla, we were thinking of what ingredients were in it. Basing on that, here's a rough recipe.<br /><br />Makes about 6 ramekins of banoffee pie.<br /><br /><u>Crust</u><br />1 1/2 cups of digestives biscuits or graham crackers<br />1/4 cup brown sugar<br />1/4 cup melted butter<br />2 teaspoon of ground cinnamon <br /><br />Mix all ingredients until well blended. Press mixture firmly against bottom of ramekins or bowls that you want to use. I would recommend using small bowls instead of a big springfoam pan. It's nicer for it to be individual servings than say... big pie-like to divide. Pop them into the refrigerator for about an hour or so. 2 hours would be great. <br /><br /><img src="http://farm4.static.flickr.com/3052/2689849434_60965d4e10.jpg" border="1"><br /><br /><br /><u>Banana</u><br /><br /><img src="http://farm4.static.flickr.com/3048/2689036727_919b97d1ce.jpg" border="1"><br /><br />Cut the bananas in segments. I used 2 bananas and it should be enough-ish. If you want more banana, use more bananas! Cut them up and arrange them in a ziplock bag as pictured. You don't have to use ziplock if you don't have them. Plain freezer/greaseproof paper would be ok, just make sure they won't stick to each other when you freeze them for a bit. Just for an hour or so. <br /><br /><br /><u>Toffee sauce</u><br />There are many ways to make toffee. There are the long winded one to the easiest of the bunch. The easiest would be just to buy caramel if they have it in stock. You can also use dulce de leche (I am pretty sure it's not sold here.. at least not at the usual stores). There are a number of ways of making dulce de leche, all using a can of condensed milk (susu cap junjung/susu pekat manis). The way to get smooth caramel is by submerging the can (labels taken off) in water and let it cook for about 4 hours. The thing is, there is a possibility of the air pressure in the can going wonky and the thing will explode. That wasn't a chance I was willing to take. Another is to ensure you have some holes on the top of the can and not fully submerge the can in water. I find that a bit mafan because water MIGHT get into the can or it won't be cooked properly. My method is the worst of the lot. I just poured the condensed milk in a pan and let it cook on a very low heat stirring occasionally. I got really bored halfway (there wasn't anything good on the telly and I was left humming to that 500 miles song!), so I quit stirring and I think that was why mine had darker chocolate spots as the sugar sort of caramelized some parts and not others. It should take about 20 minutes or so. Just see the colour changing. Make sure you do not overcook it as it will turn into hard candy when it's cooled! Just see when it's turn slightly fudge-y. Let it cool for a bit before proceeding to the next step.<br /><br /><img src="http://farm4.static.flickr.com/3247/2689074181_df6810c383.jpg" border="1"><br /><br />As you can see, there are darker spots in my caramel. What to do. It doesn't alter the taste (at least to my tastebuds). It just doesn't look that pretty la if you're that superficial. :P<br /><br /><br />Assemble your ramekins filled with its set base. Arrange bananas in the ramekins, and pour the sauce on top of it. <br /><img src="http://farm4.static.flickr.com/3130/2689039699_bae9e61072.jpg" border="1"><br /><br /><br />It should look something like this once you've filled the sauce. Next step is the topping creamm<br /><br /><img src="http://farm4.static.flickr.com/3133/2689041063_2b0a71cae1.jpg" border="1"><br /><br /><br /><u>Whipped cream</u><br />Um, I didn't really measure this.. Maybe about 2 cups of whipping cream? You can use thick cream, double cream, heavy cream. Any cream that CAN be whipped. You can even use the aerosol ones if you like because it's easier but the thing is, if you use them, you have to eat it asap. Otherwise the cream will turn watery and that spoils it. Unless you like that..? <br /><br />Whip it until it's thick. You can use electric mixer or the good oldskool ways. One of the tips when using the manual whipping ways is that to combine two whipper as one. To create more... um, whipping mechanism? This ensures more air would be trapped in the cream, hence you whipping it manually half the time it would have if you use just one. Want to better it? Use three? The sky's the limits?!!<br /><br /><br />Spoon some into the ramekins, smooth it over. Add more to make some sort of a mini dome. I am copying how Delicious did it hence the dome. I lack originality. You can have.. 1/4 crust, 1/4 banana, 1/4 toffee and 1/4 cream. Or no crust, just banana and toffee and cream. Seriously, do what you like.<br /><br /><br />Finally! To pretty it up even more. Melt some chocolates (I had some butterscotch chocolate leftover) and add a bit of cream to make it glossy and slightly runny (not too runny!!!). Decorate your pie to your liking. You can find almost anywhere in Bangkok. It is traditionally eaten with glutonous rice but i haven't got used to it yet. The first time i ordered som tum on my own the lady then ask if i wanted the glutonous rice and all i did was just stared blank back at her like 'sshheeewaaaaaahht' hahahaha. She must have thought i was a weird thai looking girl who didn't get what she was saying. Main ingredient for this salad is obviously green papaya followed by beans, tomatoes, chilli, garlic, lime, fish sauce, palm sugar, shrimp paste and some other optional ingredients like crab. Obviously because of the use of the flat rice noodles as you can see. This dish has a very interesting taste to it with the mushrooms, fried tofu, beansprouts, dried shrimp, nuts, fried garlic sprinkles, srping onions and the sauce which a type of black soy and then you add chilli flakes, a little sugar and a dash of fish sauce. A popular snack or appetizer here. It's basically boneless chicken nuggets, sometimes even smaller like popcorn. I like it very much because it's not all chicken meat so you don't get full or 'muak' with it like how some people don't like to eat chicken breast. It's crunchy from the bone/tendon/cartilage but yet you get bits of chicken meat as well. You can either eat it just like that, dip it into some thai chilli sauce or like the picture above. So last week, my brothers and I head to Pavilion for other reasons but decided to get the doughnuts as our mom hinted that she might want to try the doughnut that must be good because of the people queueing for it.<br /><br />So that we did. Took us 20 minutes. Actually, my elder brother queued for the most part of it as I got bored (read: do not want to be seen queuing hahahah). While we were queueing, one of the workers tried to coax us into getting the pre-packed doughnuts. The benefit? We do not have to queue. The catch? You have no say as to what you'll get. It's a lottery. After deliberating for 5 seconds, we decided we'd rather queue than not get what we think we want. On the menu, there were oreo flavoured doughnuts, some belgian chocolate thing, caramel (I HAD MY EYES ON THEM) and strawberry among others. But as the queueing went on, the doughnuts disappeared and the new ones made didn't replenish the lost ones. Instead of having a variety of doughnuts on selection, we're left with a double batch of less than half of what is offered. <br /><br />I still don't get the fuss.<br /><br /><br />I think this is a brilliant marketing ploy.<br /><br />Step 1: Hire people to queue up (I kid, I kid.)<br /><br />Step 2: Instead of having two tiered counter, which would be economical and if they wish to have two batches of one flavour, the two tiered counter would provide enough space for other flavours offered, have only tiered-less counter just for kicks.<br /><br />Step 3: Have a service so slow that you would make the queues longer.<br /><br /><br />Because the queues were longer, people who were queueing are more likely to buy in bulk. And because it is bought in bulk, the selection goes fast rather quickly. To aid this, make sure the people in charge of the flavour department don't replenish the sold flavours, instead just do things haphazardly. <br /><br />I noticed there were two trays of choc-nut, glazed and cheese. By the time it was our turn, we barely had any choice so we bought cheese, glazed, choc-nut, green tea, almonds, some strawberry swirl and some blueberry thing. Yes, a selection of 7 doughnuts, how can I be moaning? Of course I am not happy as I'd like to have the option to buy what is advertised and I (read: my brother) did not just queue for 20 minutes to not get what I want. <br /><br />But eh, what's done is done so we thought, the doughnut BETTER be good. The prices are OK-lah but we thought the taste should justify the 'hard-work' undertaken. We went for the cheese.<br /><br />TASTELESS.<br /><br />Is it cream cheese? Is it supposed to be sweet? Or savoury? Or what? It didn't even taste like cheese.<br /><br />The glazed ones weren't half bad. I had a taste of all of them and I think the only doughnut I like was of the almonds variation. I liked it but it still doesn't seem to match on what a lot of people have been raving about. The only thing was it WAS different from Dunkin Donuts. Just because it's different, doesn't mean it's good. Give me Cinnabons anyday. And I don't like Cinnabons.<br /><br /><br />We came up with a conclusion to the hype.<br /><br />You probably queue for half an hour (average). You don't buy A doughnut, you probably buy at least half a dozen to justify the queuing. You pay RMxx amount for the said purchase. YOU HAVE TO LIKE IT BECAUSE OF ALL THE CONTRIBUTIONS AND EFFORT MADE. To go through all these and then NOT like it would indicate the futility of the attempt, therefore making you look like mugs for investing on something that you don't even like.
